El Salvador Anaerobic Natural - Finca Las Llantas (Arabica - 1200m altitude) - Finca Las Llantas is named after the car tires placed at the entrance that serve as seats where visitors can enjoy spectacular views.
Jose Enrique Gutierrez combines traditional agronomic knowledge with his own ideas for more sustainable practices. The specialty coffee industry provided a stable price that, with its quality production, enabled him to enlarge his land and buy additional farms. Today, all of his farms, San Jose, El Limo, Las Brisas, El Horno and Los Cocos, are focused on the production of specialty coffee.
This unique coffee is really special. After the coffee is picked, it is sealed in containers and fermented for a few days before being dried naturally. The process creates an extremely fruity taste and even hints of something that tastes alcoholic.
The palate is exceptionally complex. You taste herbs, citrus, dark chocolate, red grape and stone fruit.
The coffee bean is a Sarchimor: a 'family' of varieties that are hybrids of a coffee leaf rust (CLR) resistant hybrid from East Timor and Villa Sarchi (a natural Bourbon mutation, such as Caturra and Pacas). Sarchimor has a good blend of Bourbon's flavor profile (via Villa Sarchi, a close genetic relative to Bourbon) and the resilience of the disease-resistant hybrid from East Timor. There are several well-known Sarchimor varieties, including Marsellesa and Parainema.
