Indonesia Flores Laga Lizu Anaerobic Honey
Laga Lizu means "above the clouds" in Bajawa — and that name carries everything you need to know. At 1,200 to 1,500 metres, on the mineral-rich slopes of active volcanoes in the Ngada region of Flores, our coffee cherries ripen slowly, deeply, and with purpose.
What makes this coffee so special? A collective of smallholder farmers — each tending less than a hectare — grows this coffee using traditional methods: under shade trees, alongside other crops, in harmony with the land. Here, coffee is not just a product. It's a craft, a tradition, a story passed from parent to child. As quality becomes a growing focus, these farmers invest more and more in selective picking and careful processing.
After harvest, each cherry undergoes a two-stage process: 72 hours of anaerobic fermentation in an oxygen-free environment, then — with mucilage partially retained — another 72 hours of fermentation. Finally, 7 days of drying on raised beds. Precise, patient, and deliberate.
In the cup, our Flores Laga Lizu opens with melon and kiwi — fresh, playful, and unexpected. Orange adds brightness and a lively acidity, while honey rounds the finish with warmth. A coffee that surprises you, gently.
